Sourdough is made without using commercial yeast and uses a natural starter to give it its \u201crise\u201d. To my way of thinking Sourdough is the most natural form of bread especially if you use organic flours.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>A few years ago I decided to try my hand at making sour bread myself and have been happily baking ever since. I am by no means an expert, and making sourdough can be very frustrating, but the whole act of creating a starter then mixing kneading and baking seems to me a totally wholesome activity full of opportunities to connect with life. This experience is completed when the bread is finished and you can share the fruits of your labour with loved ones and enjoy the complex flavour (flavour that is nonexistent in supermarket bread) of a freshly baked loaf of sourdough together.<\/p>\n\n\n\n<p>Sourdough is great fun and great for you, being much more nutritious than supermarket breads. So if you have never tried making sourdough this blog will hopefully give you enough information to get started. Please remember that making sourdough can be frustrating and, often, good results take a few attempts. At the end of the blog I will give a list of resources to help. One thing I have found is that even failed loaves can be eaten and are often still very tasty.<\/p>\n\n\n\n<p>Sour dough gets its rise from yeasts that are naturally fermented in a starter that is easily made at home. The only things you need to get started are a clean container, preferably glass (so you can watch your starter ferment) flour and filtered water.<\/p>\n\n\n\n<p>This method of making a starter comes from a book I have found useful over the years called \u201cWild Sourdough\u201d by Yoke Mardewi. But there are many others, just Google sourdough and a plethora of methods are easily accessed.<\/p>\n\n\n\n<p>All you need for this starter is a good quality organic Rye flour, filtered water (chlorine will kill the yeasts) and a clean container preferably glass) with a loose fitting lid.<\/p>\n\n\n\n<ul><li>Stir 75g of organic whole Rye flour with 125g water in a container with a loose lid.<\/li><li>Put the lid on and leave in a WARM place. The mixture will start to ferment within 2-3 days, bubbles will appear.<\/li><li>Once the bubbles have appeared, feed your starter with 50g Rye flour and 75g water every day.<\/li><li>Within a week you should have a live culture. It is ready when it is full of bubbles and mousse like.<\/li><\/ul>\n\n\n\n<p>I will post a recipe for sourdough using this starter from Yoke\u2019s book in a week or 2.<\/p>\n\n\n\n<p>An alternative to making a starter is to buy a readymade one; there are many available.<\/p>\n\n\n\n<p>Yoke sells her books and readymade staters from her website as well as providing lots of other more detailed sourdough information. <a href=\"http:\/\/www.wildsourdough.com.au\">www.wildsourdough.com.au<\/a><\/p>\n\n\n\n<p>Another great source of information is: &nbsp;<a href=\"http:\/\/www.sourdough.com\">www.sourdough.com<\/a><\/p>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Making Bread is an age-old art and the oldest form of leavened bread is sourdough.
